Patriotic Popsicles

We made some red, white, and blue popsicles this weekend to celebrate Independence Day. We used two kinds of molds – regular molds from Target and fancy volcano molds that Kim got from the Pottery Barn Outlet. The volcano ones have holes in the middle so you can put things such as fruit or chocolate but for these popsicles, we filled them with whipped cream and topped them with blueberries.

They’re very easy to make. I saw them on The Martha Stewart show. First, you fill half the mold with Ocean Spray’s Blueberry and Cranberry juice. Next, drop a few blueberries in with it. Wait until they freeze then pour in a mixture of Greek yogurt and the blueberry cranberry juice. Then drop a few more blueberries in (Sean’s favorite part). Let sit for four hours and they are ready!

To take them out of the mold, just dip them in warm water for about a minute and they will come out cleanly. Then enjoy! They’re great for teething babies!
